Dhokla a testy savory steamed cake from the western region of India Gujarat, It is made with a fermented batter derived from rice and split chickpeas. Dhokla can be eaten for breakfast, as the main course, as a side dish, or a snack.
Dhoklas are one of my favorite, made in many variations chickpea floor dhokla, semolina dhokla, mix daal dhokla, rice and chana daal dhokla, khatta dhokla.
Here I am sharing an instant recipe made with chickpea flour, semolina, and curd, dhoklas are served plain, with Fried green chilies, green chutney and grated coconut.
Ingredients
Rava: 2 cups
Besan: 1 cup
Oil: 3 tbsp.
Ginger garlic green chili paste: 2 green chili + ½ inch ginger + 4-5 garlic
Curd: 1 cup
Warm water: 1.5 cups
Ino salt: 1 tsp.
Turmeric powder: ½ tsp.
Salt: 2 tsp.
For Tempering
Oil: 2 tbsp.
Oil: 2 tbsp.
Mustard seeds/rai: 1 tsp.
Sesame seeds / til: 2 tsp.
Sugar: 1 tsp.
Lime juice: 1 tbsp.
Green chili: 2-3 slit
Curry leaves: 25 – 30
Water: 1/2 cup
Water: 1/2 cup
Method
1 In a pot Mix Rava, besan, Oil, Ginger garlic green chili paste, Oil, turmeric powder, warm water, curd, and Salt, mix very well and keep aside for about 15 minutes.
2 Generously grease a pot In which you will cook dhokla .
3 Preheat your steaming pot
4 Now add Ino salt to the rava besan mixture, give it a quick stir and immediately transfer it to the greased cooking pot.
5 Place the dhokla pot on the steamer immediately and place the lid.
6 Cook the dhoklas for 20-30 minutes
7 Do a doneness check by putting a knife to dhokla if it comes out clean then it’s done now, if not then cook for another 5 – 10 minutes
8 Turn off the flame and shift the dhokla to a plate with a knife.
Prepare tempering
1. Heat oil in a pan
2. Add mustard seeds, then sesame seeds, green chilies, and curry leaves.
3. Sauté for a minute.
4. Now add lime juice and sugar.
5. Pour the tempering evenly over cooked dhoklas and serve.

Preheat your steaming pot
Now add Ino salt to the rava besan mixture, give it a quick stir and immediately transfer it to the greased cooking pot, Place the dhokla pot to the steamer immediately and place the lid. Cook the dhoklas for 20-30 minutes.
Do a doneness check by putting a knife or toothpick to dhokla if it comes out clean then it’s done now, if not then cook for another 5 – 10 minutes. Turn off the flame and shift the dhokla to a plate with the help of a knife.
