Gond ke laddu

Gond (Edible gum) is usually sourced from plant gums, essentially derived from middle eastern legume or acacia plants. In India edible gum primarily sourced from babool(keekar) is a member of the acacia family. Edible gum producing plants found in the Middle East, parts of Gujrat, Maharashtra, Rajasthan, and Punjab. 
   Gond is widely used in ayurvedic preparations and is great for boosting immunity, stamina, and health, it is also beneficial for people with a week nervous system, anxiety, depression, and low vitamin D levels. Gond is also useful for lung-related issues, weakness, and fatigue.
  One of the most popular uses in India is while preparing nourishing laddus that are usually consumed in winter months. The reason why edible gum chiefly worked in laddus because just one of that calorific and nutrition-packed laddu will give you the nutrition boost required for the day. 
My mother prepares these laddus every year during the winter season. The recipe I am sharing here is gond ke laddu or we call it "thand ke laddu" at my home. I am using Moong daal flour, Urad daal flour, Gond (Edible gum) Ghee, Cashew, Almond, Pistachios, and sugar.
Gond ke laddu also consumed post-pregnancy, or by lactating mothers but the recipe I am sharing here is not for post-pregnancy recovery because I have used urad daal flour, moong daal flour, and cashew nuts which is not suitable for post-pregnancy. I will try to share gond ke laddu recipe for post-pregnancy which calls for whole wheat flour and lots of ghee and some other ingredients for extra nourishment needed for recovery.
Gond ke laddu

Ingredients
Urad daal flour:1.5 cups
Moong daal flour: 1.5 cups
Ghee: 1 cup + 1/4 cup
Cashew: 1/2 cup (Sliced)
Almond: 1 cup (Sliced)
Pistachios: 1/4 cup (Sliced)
Gond: 1/4 cup (Ground)
Sugar: 1.5 cups (Powdered)

Method
Measure almonds, cashews, pistachios, and gond, Slice almonds, pistachios, and cashew nuts.
In a grinder jar, grind the gond (edible gum) to a coarse powder.
Heat a heavy bottom kadhai and add 1 cup ghee.  
Add moong daal flour and urad daal flour and mix.
Mix very well and start roasting at medium heat.
Add more ghee if needed, here I have added 2 tbsp. more ghee.
Keep stirring and roast on medium to low heat till light golden brown color or for about 20 to 25 minutes.
It takes me about 22 minutes to roast the flour, time may vary according to the quantity, type of pan or kadhai you are using and heat of the stovetop.
Now add gond (edible gum).
Mix well and roast for few minutes.
I have roast the mixture for 3 minutes after adding gond and the mixture turn in to a nice golden color.
Turn off the heat and add sliced almonds, pistachios and cashew nuts.
Mix well, the nuts will be roast in the heat of the mixture.
Let it cool for 5 minutes.
Now add sugar and mix well.
when cool down make laddus, you can store the laddus for months
Enjoy this healthy and nutritious laddu in the morning breakfast with a glass of milk.



Recipe with stepwise photos

 Measure almonds, cashews, pistachios, and gond, Slice almonds, pistachios, and cashew nuts.


 In a grinder jar, grind the gond (edible gum) to a coarse powder.


 Prepared ingredients for laddus.


 Moong daal flour and urad daal flour in equal portions to roast. 


 Heat a heavy bottom kadhai and add 1 cup ghee.


 Add moong daal flour and urad daal flour and mix.


 Mix very well and start roasting at medium heat.

 Add more ghee if needed, here I have added 2 tbsp. more ghee.

 Keep stirring and roast on medium to low heat.


 After about 15 minutes it starts changing color.


It takes me about 22 minutes to roast the flour, Roasting time may vary according to the quantity, type of pan or kadhai you are using and heat of the stovetop.


Now add gond (edible gum).


 Mix well and roast for few minutes.
(I have roast the mixture for 3 minutes after adding gond)

The mixture turns in to a nice golden color.

 Turn off the heat and add sliced almonds, pistachios and cashew nuts.

 Mix well, the nuts will be roast in the heat of the mixture, let it cool for 5 minutes.

 Now add sugar and mix well.


 Mix very well and keep aside to cool.


 when cool down make laddus, you can store the laddus for months

 Make all the laddus this way.

 Laddus are ready to serve.
