Gol papadi

Gol Papdi is a traditional Gujarati sweet snack made with whole wheat flour, Ghee, and jaggery and flavored with cardamom powder. Gol papdi also known as Gur papdi, Sukhdi, or sukhdi papdi in some parts of Gujarat. Gol papdi generally being prepared during the winter season in Gujarati households.
  Gol papdi is a healthy sweet snack or sweet for kids also as it's loaded with the goodness of whole wheat flour, Jaggery, and ghee. In another version, you can add addible gum (gond), chopped almonds, pistachios in gol papdi.
    So here I am sharing the super tasty and flavorful gol papdi recipe, it's easy but quite tricky to make perfectly shaped and soft gol papdi. I am making here gol papdi using whole wheat flour, jaggery, ghee, cardamom powder, nutmeg powder and some dry fruits for garnish. Gol papdi can be served as tea time snack or with morning breakfast. It can be stored in airtight containers for months.
       
Golpapadi
  
Preparation Time: 8-10 minutes
Cooking Time: 15-20 minutes

Ingredients :

Whole wheat flour: 1½ cup
Ghee: ½ cup
Jaggery: ¾ cup
Cardamom Powder: ¼ tsp.
Nutmeg powder: ¼ tsp.
Almonds and pistachios: 2tbsp.


Method:

1 Thinly cut the jaggery or grate the jaggery also cut the dry fruits and keep aside.
2 Generously grease a Plate or tray with ghee to set the gol papdi.
3 Heat a heavy bottom pan add ½ cup ghee, when ghee is melted add whole wheat flour and mix well.
4 Roast the flour on a medium flame for about 15-16 minutes or till turns golden brown, stirring continuously.
5 Turn off the heat and add jaggery, cardamom powder and nutmeg powder here you will see immediately jaggery starts melting, mix well, ensure no lumps has formed.
6 Pour into Greased pot, spread evenly in the pot, sprinkle chopped dry fruits.
7 Press gently using a spatula or back of the spoon and even out the surface.
8 Make the square or diamond shape cut mark when still warm. (Here you should be very quick because if it cools down it will become hard and will not cut into desired pieces.) 
9 Gol papdi is ready to be served, store in airtight container.



Gol papdi Recipe with stepwise photos

3 Heat a heavy bottom pan add ½ cup ghee

4 When ghee is melted add whole wheat flour and mix well.


5 Roast the flour on a medium flame for about 15-16 minutes or till turns golden brown, stirring continuously.


6 Here it starts changing color, stirs continuously 

7 Now flour is roasted and change its color to golden brown

 8 Turn off the heat and add jaggery, cardamom powder and nutmeg powder here you will see immediately jaggery starts melting 


9 Mix well, ensure no lumps has formed.


10 Pour into Greased pot, spread evenly in the pot, sprinkle chopped dry fruits.


11 Press gently using a spatula or back of the spoon and even out the surface.


12 Make the square or diamond shape cut mark when still warm. (Here you should be very quick because if it cools down it will become hard and will not cut into desired pieces.) 


13 Gol papdi is ready to be served, store in an airtight container.
