Kheer a popular Indian rice pudding, But kheer is not just a sweet dish or dessert after a meal. Kheer is prepared in festivals, temples, and all special occasions. The term Kheer may derive from the Sanskrit word Ksheer which means milk. It is an essential dish in many Hindu feasts and celebrations. Kheer also regarded as an auspicious food and generally associated with Annaprashan (weaning ritual of an infant) across the subcontinent.it is offered to  Hindu deities as Bhog or Prasad
       kheer is prepared using milk, rice, ghee, sugar/ jaggery. It is often garnished using almonds, pistachios, cashews, raisins and flavored with cardamom and saffron. Another popular variation of kheer is Broken wheat, Barley, Pumpkin, tapioca or vermicelli with milk and sugar. It is also known as Payesh, Payasam, Payasa, Phirni, and Gil-e-Firdaus.
      The kheer recipe I am sharing here is the traditional rice kheer recipe as it is been prepared for Prasad in temples or as part of a festival feast in any Indian home. Kheer can be served hot or cold, in both ways it tastes great.

Ingredients
Whole milk: 1 liter
Rice: 1/4 cup
Sugar: 1/3 cup
Cardamom: 3-4 coarsely ground
Saffron strands: 7-8
Almonds: 3-4 chopped
Cashew nut: 3-4 chopped
Pistachios: 5-6 chopped

Method

1 Take one-liter whole milk in a heavy bottom saucepan and bring it to boil over medium heat.
2 add Saffron strands to boiling milk.
3 wash the rice twice, drain out the excess water and let the rice dry a little over  a cotton cloth
4 heat a cooking vessel, put about 1/8 tsp.  Of ghee and lightly roast the rice. You need to roast the rice only till it becomes a little hot, not more than it. Turn off the heat. ( you can also dry roast the rice without ghee)
5 Slightly crush the roasted rice in a mortar or with a rolling pin.
6 After milk boils about 10 minutes add the roasted Rice and continue to boil, stir occasionally.
7 after about 7 to 10 minutes check the rice if it's cooked or not. Add sugar and stir continuously for 2 minutes. (before adding sugar make sure Rice are cooked very soft.)
8 cook about 4-5 minutes and turn off the heat.
9 Add Cardamom powder, chopped dry fruits.
10 Delicious kheer is ready to serve, garnish with some dry fruits.
11 serve hot or cold.





Rice Kheer recipe with stepwise photos

9 Add Cardamom powder, chopped dry fruits.


10 Delicious kheer is ready to serve, garnish with some dry fruits.


11 serve hot or cold.
