Puran poli is an Indian sweet stuffed flatbread, have been prepared in many regions of India with various names in different regions like Vedmi, holige, obbattu, poli, puranachi poli, god poli, pappu bhakshalu, bobbatlu.

Puran poli is made from chana daal or split yellow gram, flour, jaggery or sugar, cardamom powder and/or nutmeg powder, and ghee.


Puran poli are especially being prepared on the auspicious occasion of Gudipadwa (The hindu nav varsha) traditionally at my home as I have seen since my childhood. Here I am sharing that traditional recipe of puranpoli. Puranpoli served best with simple kadi made with curd and gram flour.

Ingredients
For the stuffing (Puran)


Split Bengal gram (chana dal):1 cup
Ghee about: ¼ cup
Sugar or Jaggery (gur) grated: 1 1/4 cup
Green cardamom powder 1/4 teaspoon
Nutmeg powder: 1/4 teaspoon

For the dough (Poli)

Whole wheat flour: 1 cup
Salt: a pinch
Milk: 1/2 cup or as required
Ghee: for frying the puran poli



Method

For Puran (Stuffing)

1 Wash and soak the channa daal for 1-2 hours.

2 Drain out the excess water and transfer the daal to a pressure cooker, now add about ¾ cup of water, close the lid and pressure cook for 5-10 minutes.

3 Open the lid when cooled, and mash the channa daal very well, you can use an electric beater or also can use a mixer grinder to mash the daal.

4 Heat a kadai or a wok, transfer channa daal to it.

5 Add ghee and cook till it becomes thick and change the color to golden brown, stirring continuously.
6 Now add sugar or jaggery, mix well and cook till mixture start leaving the sides of the kadai.
7 Add Cardamom powder, nutmeg powder and Mix well
8 Turn off the heat and keep aside to cool down.

For Poli
1 In a pot take 1 cup of whole wheat flour, add a pinch of salt and mix.
2 Now add ½ cup of milk and make a smooth dough. Add more milk if required.
3 Keep aside for about 15 minutes.
4 Make medium size bolls of puran mixture.
5 From wheat flour dough make small to medium size bolls, that depends on you if you want thin covering then make small size boll.
6 Dust some flour on the boll, press it with your palm and start to roll it with your fingertips.
7 Place the puran boll in the center, gather the edges, cover and seal the poli.
8 Remove the excess dough.
9 Make it flat again with your palm.
10 Now roll out the puran poli in 6-7 inch diameter.
11 Gently place the puran poli on a heated tava.
12 When you see small brown spots appears on one side flip the puran poli to other side and apply some ghee on it
13 Again when seeing brown spots flip it and apply ghee on this side also.
14 You will see gradually puran poli start puffing up when done from both sides, remove it from tava.
15 Apply some ghee generously and serve hot.
16 Make all puran polis this way.



Puran poli recipe with step by step photos

  Daal after 2 hours.




Drain out the excess water, transfer the daal to a pressure cooker, now add about ¾ cup of water, close the lid and pressure cook for 5-10 minutes.




 Open the lid when cooled, and mash the channa daal very well, you can use an electric beater or also can use a mixer grinder to mash the daal. Here I mashed it with an electric beater.




 Heat a kadai or a wok, transfer channa daal to it.




Add ghee and cook till it becomes thick and change the color to golden brown, stirring continuously.




 Now add sugar or jaggery, mix well.




Here you will notice that sugar start melting and puran consistency is little loose.




Cook until mixture starts leaving the sides of the kadai. 




Here finally puran looking golden in color not sticking to the kadai.




Add Cardamom powder, nutmeg powder and Mix well.




 Turn off the heat and keep aside to cool down.


   In a pot take 1 cup of whole wheat flour, add a pinch of salt and
   mix.



Now add ½ cup of milk and make a smooth dough. Add more milk if required. 




 Keep aside for about 15 minutes.

You will see gradually puran poli start puffing up when done from both sides, remove it from tava. Make all puran polis this way.




Apply some ghee generously and serve hot with kadi and puran.
